Directions

De-husk the sweet corn and grill on hot grill until well marked. Remove from grill and set aside. When corn is cooled, de-kernel the cobs and set kernels aside.

Add the butter, diced onion, celery, and pepper to a medium large pot. Gently cook over medium low heat till the vegetables are just tender. Stir in flour, then cold stock. Stir the soup well to eliminate clumps. Add the potato and corn kernels. Cook over medium heat until potatoes are fork-tender. Stir in grated Gouda. Stir in heavy cream.

Portion soup into four bowls and garnish with scallions.
