Ingredients

4 Whole Wheat Tortilla, 10”

4 Medium Portobello Mushrooms, cut into strips

4 oz. Roasted Red Pepper, cut into strips

1 Vidalia Onion, cut into strips

4 Slices Castle Wood Reserve Havarti Cheese

4 oz. Arugula, washed

4 oz. Tzatziki

1 T. Olive Oil

Salt and Fresh Cracked Black pepper As Needed

Directions

Start by preparing the individual ingredients to assemble your wraps. Lightly brush the Portobello strips with Olive Oil. Season with salt and pepper. Grill Portobello strips, set aside to cool.

Lightly brush onion strips with Olive Oil. Season with salt and pepper. Grill the onion strips and set aside to cool.

Slice the roasted peppers into strips and put in a bowl. Gather together the rest of the wrap ingredients.

Spread 1oz Tzatziki on each tortilla. Follow with the Portobello. Place the Arugula on the Portobello. Top the arugula with some grilled onions and roasted red pepper. Finish with a slice of Havarti.

Roll the tortillas up and serve directly.
